Crimea presents a regional model for the development of gastrotourism in Moscow

A delegation from the Republic of Crimea takes part in the hospitality industry exhibition PIR Expo in Moscow. As part of the session of the Agency for Strategic Initiatives “Target model of the gastroindustry: the basis for strategic promotion,” Deputy Minister of Resorts and Tourism of the Republic of Crimea Sergei Gulyuk and the director of the long-term development office of the Development Corporation of the Republic of Crimea JSC, Chairman of the Interregional Association for the Development of Agro-Industrial Tourism Elena Yurchenko presented a regional model for the development of gastrotourism within the framework of the ASI federal project “Walking across Russia.”
The federal project for promoting the gastroindustry included 13 regions of the country, of which Crimea and Sakhalin became the flagships of the project. At the same time, all regions presented their most powerful developments at the session. The session showed how regions are already applying elements of the model in their practice — from support measures and personnel policies to promoting local brands and developing gastrotourism.
Experts noted that the Republic of Crimea at the level of constituent entities of the Russian Federation is distinguished by a systematic approach to creating a gastrotourism methodology and operational management of processes.
Sergey Gulyuk reported that Crimea, first of all, within the framework of an interdepartmental working group, developed and formed a regional methodology for creating and developing the industry, uniting the efforts of many departments and the expert community with a single goal. Using the completed “gastronomic passport of the region,” an analysis was carried out of the strengths and weaknesses of the gastronomic industry and development directions, on the basis of which criteria for the gastronomic uniqueness of the region were developed, a register of Crimean specialties was created, and local brands were formed that correspond to this methodology and register. Subsequently, work began on promoting gastronomic brands: projects previously developed on the basis of the registry were presented at forums and festivals Crimean menu and Crimean street food. This work will continue at many specialized platforms in the country to introduce Russians to gastro brands from the region, which are still largely unknown. For example, at the nearest Forum of Siberian hospitality “Wild plants”, where “Days of Crimea” will be held.
As noted by Elena Yurchenko, an interdepartmental working group has developed an action plan for 2025-2027, where personnel and educational programs, such as the Tourism Factory, accelerators, and the School of Guides project for training and advanced training, occupy a fundamental place. These projects bring together the professional community, manufacturers, farmers, chefs, hoteliers to achieve one of the main goals set by the Head of the Republic of Crimea — the technological sovereignty of the region.
The goals that ASI sets for the regions in the gastroindustry development model are: development of the gastroindustry as a catalyst for sustainable economic growth by attracting investment, stimulating domestic tourism and increasing the competitiveness of local products in the market.
Tasks: promoting local producers, popularizing the gastronomic traditions of peoples, improving the quality of service and services, the competencies of regional teams in the formation and development of the gastronomic brand of the region.
Today, the gastroindustry, as a separate sphere of the creative economy, is becoming a full participant in the development of territories, creating an “economy of taste” and new growth points, and gastrotourism is one of the fastest growing areas of domestic tourism. Through regional, local, national cuisine, the values, identity and image of our country or a separate region are transmitted.
