New Year’s Olivier index. Vegetarians naturally win

The cost of a set of products for preparing all types of Olivier turned out to be below the inflation rate. In the range of products this year, prices for eggs, potatoes, carrots, cucumbers and onions have decreased.

Most Russians still cannot imagine a New Year’s table without Olivier. For the index, we again made a selection of three types of Olivier salad, depending on the preference of Russians — sausage, fish or vegetarian.

The cost of a set of products for preparing all types of Olivier compared to last year turned out to be below the inflation rate. On average across the country, Olivier with fish has risen the most in price to 694 rubles 94 kopecks +6.17%, vegetarian up to 201 rubles 69 kopecks +4.38% and with sausage up to 230 rubles 25 kopecks +2.03%. In the range of products this year, prices for eggs, potatoes, carrots, cucumbers and onions have decreased.

Olivier with “delicacy” fish is the most expensive and the most expensive of the three types of salad. If you look at the regional context, compared to last year, Olivier with fish became cheaper in 6 regions — in Kalmykia, Crimea, Stavropol Territory, Bryansk, Kurgan and Kursk regions, but the most expensive thing was in the Nenets Autonomous Okrug by as much as 25.5%. The most expensive salad with fish will cost more than 900 rubles in the Murmansk region, and about 532 rubles will be cheaper in Chukotka. The rise in price of a set of products for preparing Olivier with fish above the inflation rate is recorded in 49 Russian regions.

The most famous Olivier with sausage is average in price and has increased in price the least. Its preparation will cost less than last year in 15 regions (in Moscow, Bryansk, Voronezh, Tver, Tula, Chelyabinsk regions, Komi, Crimea, Ingushetia, Chechnya, Tyva, Stavropol Territory, Khanty-Mansiysk and Chukotka Autonomous Okrug), but the price has risen the most in Karelia by 12.6%. The most expensive salad with sausage will cost more than 497 rubles in Chukotka, and less than 180 rubles in Mordovia. The rise in price of a set of products for preparing Olivier with sausage above the inflation rate is recorded in 23 Russian regions.

The most inexpensive Olivier remains vegetarian. Its preparation will cost less than last year in 11 regions (Moscow, Vladimir, Voronezh, Tambov, Amur, Ulyanovsk regions, Khakassia, Ingushetia, Crimea, Tyva), but the price has risen the most in Tatarstan by 17.6%. The most expensive salad with mushrooms will cost more than 480 rubles in Chukotka, and the cheaper one in Ingushetia is about 144 rubles. The rise in price of a set of products for preparing Olivier with sausage above the inflation rate is recorded in 35 Russian regions.

All calculations of the cost of salads are made on the basis of official data — published prices for products on Rosstat resources and are limited to a set of those goods that occupy a significant share in consumption according to statistics.

It is important to note that the cost does not take into account electricity costs — about 1.2 kW or 0.028 cubic meters of gas to boil vegetables and eggs, as well as water consumption of approximately 0.01 cubic meters for cooking and cooling.

Buying it ready-made or cooking it yourself, as well as determining the ingredients, is the choice of the consumer alone. The taste preferences of Russians are changing, as are the recipes for salads. Thousands of families have long gone beyond the traditional set of salads. Salads with poultry meat are very popular during the holidays, which go well with tender lettuce leaves: it is both satisfying and not burdensome on the stomach.
