For staff to work effectively in the kitchen of any catering establishment, a lot of auxiliary equipment is needed. Catering trolleys often underestimated, but this is really the equipment that often makes work easier. They come in different types and configurations. Let’s look at the most common models that are often purchased for catering establishments.
Dish trolleys
Carrying dirty dishes from the hall of the same dining room manually is not an easy task. This often ends in broken dishes and additional costs for purchasing new ones. Dish collection trolleys are very convenient and functional equipment that can be used to transport dozens of plates to the washing area.
What type of dish trolley should it be? The basic requirements are as follows:

material of manufacture: stainless steel. It is not subject to corrosion. The shelves are easy to clean if dirty. It is better to avoid cheaper options — they can quickly become unusable or become covered with rust spots due to high humidity;

presence of four wheels. As a rule, they are rotating, which makes the cart mobile and easy to operate. This is especially important if the kitchen is small;

the presence of sides on the shelves. They prevent dishes from falling out during transportation.
Trolleys for gastronorm containers
In a small cafe they are used very rarely, but for a large restaurant or food industry they are necessary. One trolley can hold up to 14 gastrocontainers. With their help, you can save space in the kitchen and quickly transport semi-finished products or products to a storage location or warehouse.
Trolleys for drying dishes
Not every restaurant has special dish dryers. Most often it just dries on the table. In some large restaurants, employees wipe the dishes.
A dish drying trolley will greatly simplify the task and save space. The standard trolley holds 100 plates. Water flows into special trays, and not onto other plates located one tier below. Having such a cart, the staff will not have to carry the dishes themselves to the storage cabinet, which ensures their safety.
Serving trolleys
Quite popular equipment in cafes, restaurants, and especially in canteens. Trolleys are available in several types, namely:

two-level. A universal type of trolley in which you can transport dishes, ready-made dishes or preparations. Used in the kitchen or in the guest room;

trolleys with wave-shaped shelf. Neutral equipment designed specifically for the transport of bottled drinks. Relevant for restaurants where banquets, business meetings, etc. are often held;

three-tiered. Ideal for dining rooms with high traffic volumes.
Serving carts are usually made of stainless steel. They can be of different sizes, which allows you to choose a model taking into account traffic flow, as well as free space in the kitchen or living room.
